Ready to get things started? The first thing you will need to do is head to the grocery store and pick up all of the necessary ingredients. Start in the produce aisle and pick up a few pounds of fresh strawberries. You will also need granulated sugar and cornstarch. To add a little citrus flavor, be sure to get lemon juice.

Going back to the baking aisle, pick up all-purpose flour and baking powder. You also want to be sure to get salt, whole milk, and vanilla extract as well. The last item you will need is butter. As an optional ingredient, get a little vanilla ice cream or whipped cream for serving.

Together these help promote your immune system and prevent the onset of disease," MacLean shares. "Strawberries are also full of fiber, which is wonderful for gut health, cardiovascular health, and blood sugar regulation. They are a great low-calorie snack full of great vitamins and minerals, and taste wonderful as well!" Sounds like a win to us!

You will need to use an oven for this recipe, so it's best to go ahead and preheat it ahead of time so the range can reach the desired temperature by the time you finish the prep work. Go ahead and set the oven to 350 F for this particular recipe.

Get a medium-sized mixing bowl and toss in the strawberries first. Remember that you should have removed the stems and cut them into quarters ahead of time. Then, add the sugar, cornstarch, and lemon juice, and mix them together.

Take out another bowl and add a cup of sugar. Then, toss in the flour, baking powder, and salt. That makes up all of your dry ingredients. Then, dump in the wet ingredients — also known as the milk and vanilla extract. After you add all of those items, slowly whisk the melted butter into the mix. Continue whisking until combined and there you have your batter. "I mixed the batter for this totally by hand using a whisk. It is a thinner batter so no electric tools are necessary — it is a very quick and simple recipe to put together," MacLean says.Grab an 8x11-inch baking dish and pour the batter in and top it with strawberries. Once you add the strawberries on top, do not stir it.

Once the cobbler is good to go, pop it in the oven for 40 to 45 minutes. A good indicator that the cake is done baking is once it turns golden brown on the edges. This dish is best when served immediately. Vanilla ice cream or whipped cream are two great options for serving. "This cobbler goes amazingly with some whipped cream or vanilla ice cream," MacLean shares. "Throwing in a twist with some cinnamon ice cream also would be amazing!"

Ingredients

  • 2 pounds fresh strawberries, stemmed and quartered
  • 1½ cups granulated sugar, divided, plus extra for topping
  • 2 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted and cooled

Directions

  1. Preheat the oven to 350 F.
